This is the first ambitious brew we have attempted since moving to the new location, a definate distinction from the idea of "beer is bitter" It's ambitious, but why is it so light, gorgeous, and ephemeral. Ambition is a big thing, but perhaps it is the flower of passion that spreads in the wild and wells up naturally. This sour saison is long aged <Botanica> which we used elderflower and Philly Sour yeast. It creates a complex flavor with a refreshing aroma and acidity. The elderberry and oak vanilla notes added to the aging process are truly spectacular.

Named "Brilliant Future", this Saison beer has a rich hop aroma with hints of mountains and greenery, and a light aroma from the Belgian yeast. They are all different in their assertions, but they overlap to form a single will. In our brewery, where traditional Belgian brewing techniques and cutting-edge craft beers meet, we have lightly expressed our challenge of how to interpret Saison beer and create the future.
